Bacon, Leek and Potato Soup

Description

This classic combination of flavours is simply scrumptious. Soup is loaded with vegetables and protein, which makes it perfect for lunch or dinner. It is filling, but low on calories, great for weight loss. To get a silky and creamy texture I like to use a yellow floury type of potato in this recipe.

Ingredients
  • 300 ml vegetable or ham stock
  • 100 ml single cream
  • 1 white onion (chopped)
  • 1 celery stalk (chopped)
  • 1 leek (sliced)
  • 4 streaky bacon rashers (chopped)
  • 1 potato, large (chopped)
  • salt and pepper (to taste)
Instructions
  1. Saute onion and celery for 5 minutes in the pan with butter on medium heat, stirring occasionally.

  2. Add leeks and cook for 5 minutes, stirring often.

  3. Add bacon and fry for 2-3 minutes, stirring often.

  4. Add potato and stock and cook for 20 minutes.

  5. Next, puree the soup and add single cream, salt and pepper and cook for 2-3 minutes on low heat.

  6. Enjoy!
