This salmon lunch or dinner is super tasty because salmon is so flavourful and succulent cooked this way.
Preheat the oven to 180 C.
Cook quinoa according to instructions. I cook it in salted water (1 part of quinoa and 3 parts of water) for 20 minutes then leave it for 10 minutes, covered with a lid.
Place salmon on a baking tray with parchment paper.
Season with salt and pepper, and sprinkle with lemon juice.
Bake salmon for 20 minutes.
Meanwhile, mix butter with parsley and salt in a small bowl.
Serve quinoa with salmon, add parsley butter on top and enjoy!
