Description

This salmon lunch or dinner is super tasty because salmon is so flavourful and succulent cooked this way.

Ingredients
  • 250 g boneless salmon fillet
  • 100 g quinoa
  • 50 g butter
  • 20 g fresh parsley (chopped)
  • 1 tbsp lemon juice
  • salt and pepper (to taste)
Instructions
  1. Preheat the oven to 180 C.

  2. Cook quinoa according to instructions. I cook it in salted water (1 part of quinoa and 3 parts of water) for 20 minutes then leave it for 10 minutes, covered with a lid.

  3. Place salmon on a baking tray with parchment paper.

  4. Season with salt and pepper, and sprinkle with lemon juice.

  5. Bake salmon for 20 minutes.

  6. Meanwhile, mix butter with parsley and salt in a small bowl.

  7. Serve quinoa with salmon, add parsley butter on top and enjoy!
