Description

The warm, soft banana waffle delivers a cozy, naturally sweet flavour. The juicy blueberry compote adds a bright, tangy burst that cuts through the richness. The contrasting textures of the crispy edges of the waffle and the silky-smooth compote create a delightful mouthfeel.

Ingredients
  • 2 bananas (peeled, mashed)
  • 1 egg
  • 1 tbsp honey
  • 1 tbsp butter (melted)
  • 50 ml milk
  • 50 g cottage cheese
  • 100 g self-rising flour
  • 1 pinch salt
  • For blueberry compote:
  • 100 g blueberries (froze/fresh)
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 50 ml water
Instructions
  1. Preheat the waffle-maker.

  2. In a bowl mix all the ingredients for waffles. 

  3. Bake 4 waffles until golden brown.

  4. In a pan add all the ingredients for compote. Cook the blueberries on low heat for 7-10 minutes, until the blueberries are soft.

  5. Serve warm waffles with compote and add Greek yoghurt if you wish. Enjoy!
