This salad has a delicious combination of flavours and textures. Ginger, garlic, beef, beans, peanuts make it filling and scrumptious.
I like to use beef in this recipe because it combines well with other ingredients and the dish is more filling. The dressing is simple but puts all ingredients together. Add roasted peanuts for crunch and some chilli for heat if you like.
Fry beef on the pan with 2 tbsp of oil on high heat for 3-4 minutes, stirring often. Season with salt and pepper to taste.
Remove it from the pan.
Cook beans, broccoli, and carrots in salted boiling water for 4-5 minutes. Then drain.
For the dressing mix rest of the oil, lemon juice, garlic, ginger, salt and pepper in the small jar and shake well until emulsified.
Mix veggies with meat and the dressing, gently stir and plate salad.
Garnish with peanuts and thinly sliced chilli.
