For the dressing mix rest of the oil, lemon juice, garlic, ginger, salt and pepper in the small jar and shake well until emulsified.
5 Mix veggies with meat and the dressing, gently stir and plate salad.
6 Garnish with peanuts and thinly sliced chilli.
