Savoury buckwheat crêpes with ham, cheese, and egg—also known as "galette complète" in French cuisine—are a beloved and satisfying meal that blends hearty ingredients with delicate textures. Originating from the Brittany region of France, this dish is often enjoyed as a brunch, lunch, or light dinner, offering a perfect balance of protein, richness, and rustic flavour.
Nutty, slightly earthy crêpes provide a flavorful backdrop for the savoury saltiness of ham, the melty richness of cheese, and the silky yolk of a perfectly cooked egg. In a bowl, mix all the ingredients for the batter. Set aside to rest.
Meanwhile preheat the pan to medium heat.
Spread 1/4 of the batter on the pan evenly and cook for 1 minute.
Preheat the oven to 180 °C.
Then, in the middle, place ham and cheese, and make a hole to add egg. Season with salt and pepper. Fold the edges of the crepe from 4 sides toward the centre.
And bake for 7 minutes for a jammy yolk.
When ready, serve with green salad mix on the side and enjoy!
