Super simple, but incredibly tasty breakfast for any morning.
Tender sauteed tomatoes, peppers, and onion are great combos with fried eggs. Especially I like eggs with a runny yolk. It is divine.
In a pan with olive oil saute onion for 1-2 minutes.
Add tomatoes and peppers, and season with salt and pepper. Then saute it on medium heat until soft, for about 10-12 minutes, stirring occasionally.
Next, add eggs season with salt and pepper, cover with lid and cook for about 5 minutes or to your liking.
Serve with some fresh sourdough bread and green salad. Enjoy!
