Description

The experience begins with the crunch of the toast, followed by soft, earthy mushrooms and garlicky spinach, all enveloped in the creaminess of the egg yolk. It’s a hearty and comforting meal, offering rich, savoury flavours balanced with light, fresh greens. Perfect for those times when you want something indulgent yet nourishing.

Ingredients
  • 2 eggs
  • 100 g mushrooms (sliced)
  • 2 springs of grren onion (sliced)
  • 1 handful of spinach
  • 2 garlic cloves (minced)
  • 2 slices of rye bread (toasted)
  • 1 tbsp olive oil
  • 1 tbsp butter
  • salt and pepper (to taste)
Instructions
  1. Preheat the pan with 1 tbsp olive oil and 1/2 tbsp butter to medium-high heat. Add green onions and cook for 2-3 minutes, stirring occasionally.

  2. Next add mushrooms ad cook for 3-4 minutes, stirring occasionally.

  3. Then add garlic and cook for 1-2 minutes.

  4. Next, add spinach, and cook for 2-3 minutes, until wilted.

  5. Season with salt and pepper and cook for another 1-2 minutes. Meanwhile, toast the bread and poach the eggs.

  6. To poach the eggs, bring the water in a pan to a simmer. Add 1 tbsp of vinegar and gently add the cracked in a small bowl eggs and cook them for 4-5 minutes. Then ladle them onto the plate with a paper towel.

  7. Next butter the toast, top them with mushroom and spinach and add a poached egg. Serve with some cherry tomatoes on the side and enjoy!
