Preheat the pan with 1 tbsp olive oil and 1/2 tbsp butter to medium-high heat. Add green onions and cook for 2-3 minutes, stirring occasionally.
Next add mushrooms ad cook for 3-4 minutes, stirring occasionally.
Then add garlic and cook for 1-2 minutes.
Next, add spinach, and cook for 2-3 minutes, until wilted.
Season with salt and pepper and cook for another 1-2 minutes. Meanwhile, toast the bread and poach the eggs.
To poach the eggs, bring the water in a pan to a simmer. Add 1 tbsp of vinegar and gently add the cracked in a small bowl eggs and cook them for 4-5 minutes. Then ladle them onto the plate with a paper towel.
Next butter the toast, top them with mushroom and spinach and add a poached egg. Serve with some cherry tomatoes on the side and enjoy!
