Super easy and healthy soup.
I love cream soups. They are such a nice meal, easy, light, but nutritious. The best way to serve for me is with some fresh herbs, seeds or for more protein add pan-fried prawns or chicken fillet.
Preheat the pan with olive oil on medium heat.
Saute onion and garlic for 1-2 minutes, stirring occasionally.
Add cauliflower, courgette, potato, and water and cook for 15-20 minutes, until vegetables are soft.
Season with salt and pepper and cook for 1 minute.
Puree it with the blender until smooth.
Serve with some fresh parsley, sesame seeds and olive oil. Enjoy!
