Description

I love cream soups. They are such a nice meal, easy, light, but nutritious. The best way to serve for me is with some fresh herbs, seeds or for more protein add pan-fried prawns or chicken fillet.

Ingredients
  • 1 small cauliflower head (cut in pieces)
  • 1 small courgette (slice)
  • 1 small white potato (cubed)
  • 1 white onion (diced)
  • 3 garlic cloves (sliced)
  • 2 tbsp olive oil
  • salt and pepper (to taste)
Instructions
  1. Preheat the pan with olive oil on medium heat.

  2. Saute onion and garlic for 1-2 minutes, stirring occasionally.

  3. Add cauliflower, courgette, potato, and water and cook for 15-20 minutes, until vegetables are soft.

  4. Season with salt and pepper and cook for 1 minute.

  5. Puree it with the blender until smooth.

  6. Serve with some fresh parsley, sesame seeds and olive oil. Enjoy!
