Ingredients
  • 200 g cooked chicken fillet (chopped)
  • 50 g salad leaves
  • 100 g halloumi (sliced)
  • 1 tbsp olive oil
  • 20 g pumpkin seeds
  • For dressing:
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp hot chilli oil
  • salt (to taste)
Instructions
  1. Preheat the pan with oil to medium-high heat and cook halloumi for about 2 minutes per side until golden, then remove on a side.

  2. In a small bowl mix all the ingredients for dressing.

  3. On the plate layer the salad leaves, then chicken, halloumi and top with dressing and pumpkin seeds. And enjoy!
