Spicy flavourful chicken dish. This tender chicken is falling from the bone, and it is very easy to cook.
All the spices and wine make his chicken very tasty. I like to use chicken legs because they are a good portion of protein for each serving, but feel free to use any parts of the chicken.
Fry onion celery, onion, and garlic for 7-8 minutes on medium heat, stirring frequently.
Add chilli and cook for 1 minute.
Add wine and cook for 1-2 minutes on high heat to cook off the alcohol.
Add stock, tomato passata, tomatoes, tomato puree, dry oregano and thyme.
Add chicken legs and simmer for 45 minutes with a lid on.
Season with salt and pepper and simmer for 15 more minutes.
