Description

All the spices and wine make his chicken very tasty. I like to use chicken legs because they are a good portion of protein for each serving, but feel free to use any parts of the chicken.

Ingredients
  • 1 kg chicken legs
  • 1 white onion (chopped)
  • 3 garlic cloves (minced)
  • 3 celery stalks (chopped)
  • 1 chilli pepper (sliced)
  • 200 g tomatoes (chopped)
  • 1 tbsp tomato puree
  • 100 ml tomato passata
  • 100 ml red wine
  • 150 ml chicken stock
  • 1 tsp dry oregano
  • 1 tsp dry thyme
  • 1 tbsp olive oil
  • salt and pepper (to taste)
Instructions
  1. Fry onion celery, onion, and garlic for 7-8 minutes on medium heat, stirring frequently.

  2. Add chilli and cook for 1 minute.

  3. Add wine and cook for 1-2 minutes on high heat to cook off the alcohol.

  4. Add stock, tomato passata, tomatoes, tomato puree, dry oregano and thyme. 

  5. Add chicken legs and simmer for 45 minutes with a lid on.

  6. Season with salt and pepper and simmer for 15 more minutes.
