Preheat the pan with olive oil to medium high heat. Then fry mushrooms until cooked, stirring occasionally. Cook for about 7-8 minutes. Season with salt and pepper and remove from the pan.
Next, cook the chicken fillets on the pan for about 5-7 minutes, stirring occasionally. Season with salt and pepper, cook for 30 seconds and remove from the pan.
Meanwhile in a small jar mix all the ingredients for the dressing. Cover with the lid and shake until all is well combined.
Then in a bowl add kale and massage it with your hands for 1-2, until it is softer.
Then plate the salad by spreading the kale on the bottom, next mushrooms and chicken, then tomatoes and onion and top with dressing and pine nuts. Enjoy!
