Description
  • The tender chicken is savoury and juicy, providing substance to the salad. The mushrooms are earthy and full of umami, adding a warm, savory element. The kale is robust and slightly chewy but softened from massaging, offering a solid base for the other ingredients. The honey mustard dressing brings a delightful balance of sweet, tangy, and slightly spicy notes, lifting the flavours and adding brightness. The pine nuts bring a crunchy texture, adding variety and depth to each bite.
Ingredients
  • 300 g chicken breast fillet (cubbed)
  • 100 g mushrooms (quatered)
  • 100 g cherry tomatoes (halved)
  • 100 g kale (chopped)
  • 1 small red onion (thinly sliced)
  • 1 tbsp pine nuts
  • 1 tbsp olive oil
  • salt and pepper (to taste)
  • For dressing:
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tbsp honey
  • 1 tsp wholegrain mustard
  • salt and pepper (to taste)
Instructions
  1. Preheat the pan with olive oil to medium high heat. Then fry mushrooms until cooked, stirring occasionally. Cook for about 7-8 minutes. Season with salt and pepper and remove from the pan.

  2. Next, cook the chicken fillets on the pan for about 5-7 minutes, stirring occasionally. Season with salt and pepper, cook for 30 seconds and remove from the pan. 

  3. Meanwhile in a small jar mix all the ingredients for the dressing. Cover with the lid and shake until all is well combined.

  4. Then in a bowl add kale and massage it with your hands for 1-2, until it is softer.

  5. Then plate the salad by spreading the kale on the bottom, next mushrooms and chicken, then tomatoes and onion and top with dressing and pine nuts. Enjoy!
