In a small bowl, whisk together buttermilk, lemon juice, olive oil, salt and pepper. Chill in the fridge while you prepare the salad.
3 In each serving bowl, layer the lettuce first. Arrange the corn, carrots, red onion, cucumber, and cherry tomatoes around the edges. Place the sliced chicken in the center.
4 Drizzle the buttermilk lemon dressing over the top. Enjoy right away while everything is fresh and crisp!
