Description

This salad is packed with protein, fibre and vitamins. It is crunchy and crispy with cabbage, celery and apple. I like the combination of the ingredients and dressing. I use a mix of low-fat mayo and plain greek yoghurt in the dressing so it helps to tie together salty and sweet flavours.

Ingredients
  • 200 g roasted chicken breast fillet (sliced thinly)
  • 200 g cabbage (sliced thinly)
  • 1 celery stalk (sliced thinly)
  • 1/2 apple (cored, sliced thinly)
  • 1/2 red onion (sliced thinly)
  • For the dressing:
  • 2 tbsp low fat mayo
  • 2 tbsp plain greek yoghurt
  • 1 tbsp lemon juice
  • 1 tsp wholegrain mustard
  • salt (to taste)
Instructions
  1. Slice all the ingredients and place them into the bowl.

  2. Mix all the ingredients for the dressing.

  3. Pour the dressing into the bowl with salad and mix thoroughly.

  4. Enjoy!
