Healthy and tasty chicken salad will be great for light lunch or dinner.
This salad is packed with protein, fibre and vitamins. It is crunchy and crispy with cabbage, celery and apple. I like the combination of the ingredients and dressing. I use a mix of low-fat mayo and plain greek yoghurt in the dressing so it helps to tie together salty and sweet flavours.
Slice all the ingredients and place them into the bowl.
Mix all the ingredients for the dressing.
Pour the dressing into the bowl with salad and mix thoroughly.
