Chicken Salad with Strawberries

This yummy summery salad is a great idea for lunch or dinner. It is a complete meal full of not only flavour but vitamins and minerals, protein and fibre.

Description

Strawberries are not only a great ingredient for desserts but salads too. In this salad, they add freshness and sweetness, which brighten up the meal.

Ingredients
    For marinade/dressing:
  • 2 lime juices
  • 1 tbsp olive oil
  • 1 tsp wholegrain mustard
  • salt to taste
  • 100 g chicken fillet (cut into bite size pieces)
  • 10 mozzarella pearls
  • 100 g salad leaves (torn)
  • 1/2 avocado (cubed)
  • handful strawberries (quartered)
  • handful tomatoes (halved)
Instructions
  1. Mix all the ingredients for the marinade/dressing.

  2. Marinate chicken meat for 15-30 minutes with 1/2 of the marinade/dressing mixture.

  3. Fry chicken for 4-5 minutes, stirring occasionally.

  4. Plate salad and add dressing on top, mix it and enjoy!
