This is a super quick, easy and tasty meal for colder days.
A simple combination of vegetables and chicken fillet in this meal is perfect. And the best thing is that this dish is ready in about 30 minutes, so it is a great idea for busy weekdays.
Preheat the pan with oil to medium heat and add onion and garlic, saute for 2-3 minutes, until soft, stirring frequently.
Add carrot, celery, and chilli pepper and cook. for about 2-3 minutes.
Add chicken fillet, and cook for 3-5 minutes, until there is no more pink.
Next add spices, potato, and water to cover the veggies and meat and cook for 20 minutes on medium heat with the lid on.
Serve with fresh parsley.
