I like to cook or roast whole chicken every week. And there are some leftovers on the next day. So this is a great option to use up.
In a bowl mix shredded chicken fillet, mayo, mustard, chopped coriander leaves, lemon juice, and season with salt and pepper. Mix until well combined.
Toast the bread.
Spread the chicken mixture between the bread slices. Then serve.
