Description

I like to cook or roast whole chicken every week. And there are some leftovers on the next day. So this is a great option to use up.

Ingredients
  • 200 g shredded cooked or roasted chicken fillet
  • 2 slices rye bread
  • 3 tbsp mayo
  • 1 tsp wholegrain mustard
  • 1 tbsp lemon juice
  • 1 tbsp coriander (finelly chopped)
  • salt and pepper (to taste)
Instructions
  1. In a bowl mix shredded chicken fillet, mayo, mustard, chopped coriander leaves, lemon juice, and season with salt and pepper. Mix until well combined.

  2. Toast the bread.

  3. Spread the chicken mixture between the bread slices. Then serve.
