Chicken Toscana

Description

This recipe helps to add more healthy fibre to our diet. Spinach is great for our bodies and here we can enjoy it along with chicken, as a protein, and ripe flavourful tomatoes.

Ingredients
  • 300 g chicken breast fillet (thinly sliced)
  • 3 tomatoes (sliced lengthwise)
  • 200 g spinach
  • 300 ml single cream
  • 2 garlic cloves (minced)
  • 1 tsp dry chilli flakes
  • 1 tsp dry oregano
  • 2 tbsp olive oil
  • salt and pepper (to taste)
Instructions
  1. Season chicken with salt and pepper on both sides.

  2. Fry chicken on high heat in a pan with oil for 2-3 minutes per side.

  3. Remove the chicken from the pan.

  4. Fry tomatoes for 5 minutes on medium heat, until soft.

  5. Add garlic and fry for 30 seconds.

  6. Add chilli flakes, and spinach and cook for 3-4 minutes, until spinach wilted, stirring occasionally.

  7. Add single cream, season with salt and pepper, and add dry oregano.

  8. Return chicken and simmer on low heat for 2-3 minutes more.

  9. And serve with favourite sides.
