This hearty, tasty meal is flavourful and easy. I love the combination of textures and flavours.
In this meal, we have juicy chicken, spicy chorizo and loads of veggies. It is low carb and will be a great option for weight loss lunch or dinner.
Fry chicken thighs for 3-4 minutes on medium heat until browned and season with salt and pepper on both sides.
Remove it from the pan and then fry the chorizo for 2-3 minutes, stirring occasionally.
Remove from the pan chorizo and fry the onion for 4-5 minutes until soft.
Then add the rest of the vegetables, garlic, dry thyme, stock and return chicken and chorizo. Season with salt and pepper. Cook it for 45 minutes, covered with a lid.
Add lemon juice and cook for 2-3 minutes and enjoy!
