This soup is ready in about 30 minutes. As it is loaded with vegetables and chorizo it can be a filling lunch or dinner.
This soup recipe requires only a few ingredients. I love the combination of chorizo and spring greens, it is scrumptious, and we got the vitamins that are so important for our bodies.
To the pan with olive oil on medium heat add onion and garlic, and cook for about 2-3 minutes, until soft, stirring occasionally.
Then add chorizo and cook for 2 minutes.
Next, add potatoes and cook for 2-3 minutes, stirring occasionally.
Then add salt and pepper, thyme, and chicken stock and simmer for 15 minutes.
After that add spring greens and cook for 5-7 minutes.
And serve.
