Description

This soup recipe requires only a few ingredients. I love the combination of chorizo and spring greens, it is scrumptious, and we got the vitamins that are so important for our bodies.

Ingredients
  • 200 g chorizo (sliced thinly)
  • 200 g white potato (peeled and cubed)
  • 1 leek (sliced thinly)
  • 2 garlic cloves (minced)
  • 150 g spring greens (sliced thinly)
  • 500 ml chicken stock
  • 2 tsp fresh thyme
  • salt and pepper (to taste)
Instructions
  1. To the pan with olive oil on medium heat add onion and garlic, and cook for about 2-3 minutes, until soft, stirring occasionally.

  2. Then add chorizo and cook for 2 minutes.

  3. Next, add potatoes and cook for 2-3 minutes, stirring occasionally.

  4. Then add salt and pepper, thyme, and chicken stock and simmer for 15 minutes.

  5. After that add spring greens and cook for 5-7 minutes.

  6. And serve.
