Description

In these waffles, we have an amazing combination of courgette, dill and cheese. Perfectly paired with some poached eggs, cherry tomatoes and buttered asparagus they make really satisfying breakfast.

Ingredients
    For waffles:
  • 1 egg
  • 50 g cottage cheese
  • 50 ml milk
  • 100 g courgette (grated)
  • 50 g Cheddar cheese (grated)
  • 150 g self-rising flour
  • 2 tbsp butter (melted)
  • 1 tbsp fresh dill (chopped)
  • 1/2 tsp dry garlic
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • To serve with:
  • 4 eggs (poached)
  • 10 cherry (tomatoes)
  • 6 asparagus tips (cooked and buttered)
  • some fresh dill
Instructions
  1. In a bowl mix all the ingredients for the waffles.

  2. Bake waffles in a waffle maker for 2-3 minutes or until golden brown.

  3. Serve warm with poached eggs, cherry tomatoes and buttered asparagus on the side.
