Stew the Apples
Start with the apples so they have time to soften and release their natural sweetness.
Add the chopped apples to a small saucepan with:

cinnamon
-
honey
-
a splash of water
Cook gently over low–medium heat for 8–12 minutes, stirring occasionally, until the apples are soft, glossy, and lightly syrupy. Set aside and keep warm.
2 In a separate saucepan, combine:

rolled oats
-
milk
-
a pinch of salt
Bring to a gentle simmer, then reduce the heat and cook slowly for 5–8 minutes, stirring often. The oats will absorb the milk and turn creamy.
Adjust the consistency by adding a splash more milk if you prefer looser porridge.
3 Spoon the warm porridge into bowls.
Top generously with the stewed apples.
Finish with an extra drizzle of honey, chopped pecans and some chia seeds, if desired.
Serve immediately while warm and comforting.
