Fish stew

Description

This rich, hearty, scrumptious stew will be your family favourite for sure. It cooks in a few simple steps so anyone can do and it requires a few simple ingredients and a couple of minutes of prep, so perfect for those who want to eat great home-cooked meals, but don't want to spend a lot of time in the kitchen.

Ingredients
  • 400 g cod (boneless, skinless)
  • 400 g peeled tomatoes
  • 400 g white beans in brine (cooked)
  • 1 white onion (finely chopped)
  • 2 garlic cloves (minced)
  • 1 chilli pepper (thinly sliced)
  • 2 tbsp olive oil
  • salt and pepper (to taste)
  • small bunch of parsley (finely chopped)
Instructions
  1. Preheat the pan with olive oil and fry the onion for 3 minutes at medium heat. Add garlic and chilli pepper and fry for 30 seconds.

  2. Then add paprika and tomatoes and crush them with a spoon, cook for 2-3 minutes.

  3. Add fish and cook for 7-10 minutes with a lid.

  4. Then add beans and salt, and cook for 2-3 minutes on low heat.

  5. Season it with salt and pepper, and cook for another 5 minutes and serve.

Use other white fish for this recipe, for example, haddock.
