Delicious and speedy breakfast for everyone.
Amazing soft fluffy pancakes without added sugar are ready in about 10 minutes. Simply mix all the ingredients and fry the pancakes then serve with more blueberries and maple syrup or greek yoghurt. It is super tasty and kids love them.
Mash ripe bananas with a fork in a bowl.
Add eggs, and milk and mix.
Add salt, self-rising flour and 1 tbsp coconut flour (optional) and stir well until combined.
Then add blueberries and gently fold them in the batter.
Preheat the pan with olive oil on medium heat and fry pancakes for about 30-40 seconds per side or until golden brown.
Serve warm with more berries, maple syrup, yoghurt etc.
