Preheat the oven to 180 C.
Mix all ingredients for the marinade. Add chicken thighs and marinate for 15-30 minutes or overnight.
Mix all vegetables with oil, salt and pepper.
Place meat and vegetables on a baking tray and bake for 45 minutes.
