Ginger and Lime Baked Chicken

So this chicken is definitely full of flavour. Lime and ginger make a perfect combo and chicken turns out super juicy and tasty.

Description

These thighs are baked with seasoned vegetables so you can have it all done at the same time. Feel free to add fresh salad you can make while the main dish is baking. This meal is great for a low carb diet too. 

Ingredients
  • 500 g chicken thighs
  • For marinade:
  • 1 tbsp ginger (minced)
  • 1 lime zest and juice
  • 2 tbsp coconut aminos
  • 1 tbsp olive oil
  • salt and pepper (to taste)
  • For baked vegetables:
  • 1 aubergine (cubed)
  • 1 white onion (sliced)
  • 1 bell pepper (sliced lengthwise)
  • 10 cherry tomatoes
  • 1 tbsp olive oil
  • salt and pepper (to taste)
Instructions
  1. Preheat the oven to 180 C.

  2. Mix all ingredients for the marinade. Add chicken thighs and marinate for 15-30 minutes or overnight.

  3. Mix all vegetables with oil, salt and pepper.

  4. Place meat and vegetables on a baking tray and bake for 45 minutes.

Note

Use chicken drumsticks instead of chicken thighs, they will turn out as good as thighs.
