Light and flavourful salad will be a great option for a lunch or dinner.
This salad will be perfect for weight loss as it is low on calories. I like to use chicken breast fillet because it is lean. And courgette and peppers are amazing with chicken. Add olives and capers (optionally) to boost flavour.
Marinate chicken for 10-15 minutes with salt, pepper, Italian herbs, olive oil, and lemon juice.
Mix sliced vegetables with olive oil, salt and pepper.
Grill vegetables for 10-12 minutes.
Mix all the ingredients for the dressing.
Steam the peppers for 5 minutes in the bowl covered with cling film. Peel peppers.
Put on the plate grilled vegetables, chicken, olives, and capers, and add dressing on top.
