Preheat the grill pan to hot.
Season chicken fillet with salt and pepper.
Grill chicken for 4-5 minutes per side on medium-high heat.
Mix all the ingredients for dressing in a small jar, cover with a lid, and shake well until emulsified.
Let cooked chicken rest for 2-3 minutes, then slice it into bite-sized pieces.
Mix spinach, chicken, tomato, and artichokes in a bowl, pour dressing and gently mix.
Divide between plates and top with crumbled feta, and enjoy!
