Description

I like to use boneless sea bass in this recipe, as its skin turns out crispy under the grill and the flesh is juicy and flaky. To make lunch or dinner really quick I like to pair it with salad. Crunchy salad with fennel, apple and cucumber is ready while the fish cooks. In this way, we got low calories meal with a Mediterranean vibe.

Ingredients
  • 250 g seabass (boneless)
  • salt and pepper (to taste)
  • 1 tbsp lemon juice
  • 1 tbsp olive oil
  • For salad:
  • 200 g fennel (thinly sliced)
  • 100 g apple (corred, thinly sliced)
  • 100 g cucumber (thinly sliced)
  • For salad dressing:
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • salt and pepper to taste
Instructions
  1. Preheat the grill to medium.

  2. Season fish with salt and pepper on both sides and sprinkle with lemon juice and olive oil.

  3. Bake fish for 15 minutes.

  4. Mix all the ingredients for dressing in a small jar, and shake well until well combined.

  5. Mix all the salad ingredients with the dressing and mix gently.

  6. Serve with fish when ready.
