Very satisfying dinner with a few simple ingredients inspired by an Italian vibe.
This chicken fillet baked with sweet tomatoes and Italian herbs has a rich flavour and cooks fast and easy in one baking tray.
First mix spices, olive oil and lemon juice.
Next, mix chicken with marinade and leave to marinate for 15-30 minutes.
Spray the baking dish with oil and spread sliced onion on the bottom.
Then spread sliced bell pepper and season it with salt and pepper.
Then layer with chicken fillet and tomatoes on top.
Cover with foil and bake for 15 minutes at 200 C.
Then take off foil and olives and bake for another 15 minutes without foil.
And serve!
