Description

It takes minutes to whip up this breakfast. 

Ingredients
  • 1 egg
  • 50 g cottage cheese
  • 50 ml milk
  • 20 g butter (melted)
  • 200 g self-rising flour
  • 1 tsp sugar
  • 1 pinch salt
  • 1 tsp lemon zest
  • For fruit salad:
  • 2-3 apricors (stoned, chopped)
  • 100 g strawberries (chopped)
  • 100 g cherries (helved, stoned)
  • 1 tbsp lemon juice
  • 1 tbsp honey
  • For yoghurt:
  • 100 g plain greek yoghurt
  • 1 tsp honey
  • 1/2 tsp vanilla extract
Instructions
  1. Preheat the waffle maker.

  2. In a bowl mix all the ingredients for the waffles.

  3. Bake waffles until golden brown.

  4. Meanwhile, mix all the ingredients for the fruit salad.

  5. Mix all the ingredients for honey yoghurt.

  6. When ready serve and enjoy!
