Description

An amazing combination of feta cheese and lamb flavoured with Italian herbs will be a complete meal served with pittas and loads of vegetables. I like to use tender parts of lamb fillet so it cooks in minutes. 

Ingredients
  • 2 wholewheat pittas
  • 250 g lamb fillet (thinly sliced and pounded)
  • 50 g feta cheese (sliced)
  • 50 g cucumber (sliced thinly)
  • 50 g tomatoes (sliced thinly)
  • 1/2 red onion (sliced thinly)
  • 2 tbsp olive oil
  • 50 g lettuce (leaves)
  • 2 tsp italian herbs
  • salt and pepper (to taste)
Instructions
  1. Preheat the grill.

  2. Pound thinly sliced lamb fillet with a meat tenderizer.

  3. Drizzle with some olive oil and season with salt, pepper, and Italian herbs on both sides.

  4. Grill the meat for 5-6 minutes, then let it rest for 2-3 minutes.

  5. Toast the pitta bread in a toaster. Split open and stuff with salad leaves, lamb, vegetables and feta cheese. 

  6. Enjoy!
