Delicious quick lunch or dinner for busy days.
An amazing combination of feta cheese and lamb flavoured with Italian herbs will be a complete meal served with pittas and loads of vegetables. I like to use tender parts of lamb fillet so it cooks in minutes.
Preheat the grill.
Pound thinly sliced lamb fillet with a meat tenderizer.
Drizzle with some olive oil and season with salt, pepper, and Italian herbs on both sides.
Grill the meat for 5-6 minutes, then let it rest for 2-3 minutes.
Toast the pitta bread in a toaster. Split open and stuff with salad leaves, lamb, vegetables and feta cheese.
