Description

Rich in protein from the eggs and feta, this meal also offers a good dose of vitamins and antioxidants from the vegetables. The olives and feta provide healthy fats, making it both delicious and nourishing. It’s perfect as a hearty breakfast, a light lunch, or even a quick dinner.

Ingredients
  • 2 eggs (beaten)
  • 1 tbsp olive oil
  • 50 g cherry tomatoes (halved)
  • 1 bell pepper (thinly sliced)
  • 1/2 white onion (thinly sliced)
  • 5 olives (sliced)
  • 30 g feta (crumbled)
  • fresh basil (torn)
Instructions
  1. Preheat the pan with olive oil to medium heat. Add the onion and cook for 1-2 minutes. Then add the tomatoes and bell pepper. Cook for 3-4 minutes, until soft.

  2. Season with salt and pepper, add beaten eggs and top with olives and feta.

  3. Preheat the oven to 180 C. And Cook the eggs for 6-7 minutes.

  4. When ready, serve with fresh basil, salad and sliced avocado and enjoy!
