Mediterranean Style Stew

This one-pot chicken stew is perfect to make you feel satisfied and full. This vibrant meal is made with chopped vegetables, rich herby flavours from thyme, oregano, garlic, with a splash of lemon juice to brighten the taste even more.

Description

When you want a yummy, easy, but rich and nutritious meal for all family this stew is a perfect match.

Ingredients
  • 500 g chicken thighs fillet
  • 1 white onion (finely chopped)
  • 3 garlic cloves (minced)
  • 1 carrot (sliced)
  • 1 red bell pepper (seeded and chopped)
  • 400 g peeled tomatoes
  • 1 tbsp tomato puree
  • 2 tsp paprika
  • 1 tsp dry thyme
  • 1 tsp dry oregano
  • 2-3 tbsp lemon juice
  • 400 ml chicken broth
  • salt and pepper (to taste)
  • 2 tbsp olive oil
  • 2 tbsp parsley (chopped)
Instructions
  1. Season chicken fillets with salt and pepper.

  2. Fry chicken on medium heat for 3-4 minutes per side.

  3. Remove chicken from a pan on a plate and set aside.

  4. Fry onion, garlic, carrot, and peppers for about 5 minutes, until soft.

  5. Then add paprika, thyme, oregano, tomato pure, peeled tomatoes, chicken broth and chicken and simmer for 30 minutes.

  6. After that season it with salt and pepper, add lemon juice and cook for 1 more minute.

  7. Serve with a dollop of soured cream and chopped parsley.

Note

For this dish try to choose chicken thigh fillets the same size, they are more succulent and cooks really quickly.
