This speedy salad is packed with great flavours, protein, fibre and vitamins. It is perfect for meatless lunch or dinner.
I like to use for this recipe artichoke hearts in oil, as part of the oil goes well as a dressing for dish. Add ripe and sweet tomatoes to get the most of the summer. And roast the bell pepper under the grill at 220 for 10 minutes or use store-bought roasted peppers.
Mix all prepared ingredients.
Add oil from the jar with artichokes, lemon juice, salt and pepper to taste.
