Description

I like to use for this recipe artichoke hearts in oil, as part of the oil goes well as a dressing for dish. Add ripe and sweet tomatoes to get the most of the summer. And roast the bell pepper under the grill at 220 for 10 minutes or use store-bought roasted peppers. 

Ingredients
  • 100 g chickpeas in brine (rinced and drained)
  • 2 large tomatoes (chopped)
  • 1 red onion (sliced thinly)
  • 1 roasted bell pepper (chopped)
  • 4 garlic cloves (minced)
  • 100 g artichokes in oil (chopped)
  • 3 tbsp oil from the jar with artichokes
  • 1 lemon, juiced
  • salt and pepper (to taste)
Instructions
  1. Mix all prepared ingredients.

  2. Add oil from the jar with artichokes, lemon juice, salt and pepper to taste.

  3. Enjoy!
