This hearty and healthy soup is perfect for any time of the year. Loaded with vegetables and protein it is a balanced and delicious complete meal.
Soup is such a good option for lunch or dinner. It is healthy and fills up very well. This recipe is great when loads of veggies are in season. But I like to cook it all year round. Great for colder days as it has a bit of heat, so warms up too. Also, this version is low carb, great for those on a low carb diet and for weight loss.
First fry onion, carrot and celery until soft on a pan with olive oil, for about 5-7 minutes on medium heat.
Then add garlic and cook for 1 minute.
Then add tomatoes, chilli flakes, bay leaf, water, and chicken stock. Cook for 20-25 minutes.
Meanwhile add egg, cheese, salt and pepper to the mince and mix thoroughly. Form meatballs.
Add kale and green beans to the soup and cook for 2 minutes.
Then add meatballs and cook for 10 minutes.
Next season it with salt and pepper and simmer for 1-2 minutes.
Then serve it with more grated cheddar on top.
