Minestrone with turkey meatballs

This hearty and healthy soup is perfect for any time of the year. Loaded with vegetables and protein it is a balanced and delicious complete meal.

Description

Soup is such a good option for lunch or dinner. It is healthy and fills up very well. This recipe is great when loads of veggies are in season. But I like to cook it all year round. Great for colder days as it has a bit of heat, so warms up too. Also, this version is low carb, great for those on a low carb diet and for weight loss.

Ingredients
  • 1 white onion (finely chopped)
  • 1 carrot (thinly sliced)
  • 1 celery stick (finely chopped)
  • 2-3 garlic clove (minced)
  • 200 g turkey mince
  • 1 egg
  • 2 tbsp cheese (grated, Grana Padano)
  • 150 g kale (rinced, draned, rough stems removed)
  • 100 g green beans
  • 1 large tomato (finely chopped)
  • 300 ml water
  • 200 ml chicken stock
  • 1 tsp chilli flakes
  • 1 bay leaf
  • salt and pepper (to taste)
Instructions
  1. First fry onion, carrot and celery until soft on a pan with olive oil, for about 5-7 minutes on medium heat.

  2. Then add garlic and cook for 1 minute.

  3. Then add tomatoes, chilli flakes, bay leaf, water, and chicken stock. Cook for 20-25 minutes.

  4. Meanwhile add egg, cheese, salt and pepper to the mince and mix thoroughly. Form meatballs.

  5. Add kale and green beans to the soup and cook for 2 minutes.

  6. Then add meatballs and cook for 10 minutes.

  7. Next season it with salt and pepper and simmer for 1-2 minutes.

  8. Then serve it with more grated cheddar on top.
