Description

Pesto adds a creamy, herbaceous richness with nutty undertones from pine nuts (or other nuts), garlic, basil, and Parmesan. Tomato provides a juicy burst of acidity, balancing the richness of the pesto. Artichoke brings a tender texture with subtle sweetness and a mild tangy note. Eggs offer a savoury, soft base that ties all the ingredients together.

Ingredients
  • 2 eggs
  • 2 pesto
  • 50 g cherry tomatoes (halved)
  • 50 g artichokes in oil (sliced)
  • 1 tbsp olive oil
  • salt and pepper (to taste)
Instructions
  1. Preheat the oven to 180 C. Then to the preheated pan with olive oil add whisked eggs.

  2. On top add tomatoes, artichokes, and pesto and put it in the oven for 7-10 minutes at 180 C.

  3. When ready serve with salad on the side and enjoy!
