Description

This is an amazingly colourful and flavourful dish loaded with protein and vegetables. The best part is that it is so simple that anyone can make it.

Ingredients
  • 150 g raw jumbo king prawns (defrosted, peeled)
  • 50 g rice (rinsed, drained)
  • 1 white onion (peeled, diced)
  • 3 garlic cloves (minced)
  • 1 chilli pepper (deseeded, minced)
  • 50 sweet corn
  • 50 g peas
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp turmeric
  • salt and pepper (to taste)
Instructions
  1. Preheat a pan with 1 tbsp olive oil on medium heat. Add onion and cook until soft, about 2-3 minutes, stirring occasionally.

  2. Next, add garlic and chilli pepper, and cook for 1-2 minutes.

  3. Then add paprika and turmeric, stir it and cook for 1 minute.

  4. Next add rice, prawns and 125  ml water, season with salt and pepper. Cook for 12 minutes, covered with a lid.

  5. Then add sweet corn and peas and cook for 3-5 minutes more.

  6. When ready serve with some fresh chopped parsley and enjoy!
