Description

Plump, juicy prawns are lightly grilled or pan-seared to bring out their natural sweetness. They are nestled on a bed of fresh salad mix, which adds a crisp and slightly earthy contrast. Ripe avocado slices contribute a creamy, buttery texture, while cherry tomatoes—bursting with sweetness and slight acidity—provide a juicy pop of freshness.

Ingredients
  • 200 g raw jumbo king prawns
  • 100 g cherry tomatoes (halved)
  • 50 g salad mix
  • 1 avocado (peeled, stoned, cubbed)
  • 2 tbsp olive oil
  • salt and pepper (to taste)
  • For the dressing:
  • 50 g Greek yoghurt
  • 1 tsp chilli oil
Instructions
  1. Preheat the pan with olive oil to medium heat and fry prawns for 2-3 minutes per side. Remove from the pan when ready.

  2. In a small bowl mix yoghurt and chilli oil until well combined.

  3. Plate all the ingredients and top with the dressing, add some lemon juice, if you like, and enjoy!
