Description

This meal is light and healthy, offering a balanced mix of lean protein (prawns) and fresh vegetables. The lemon mustard dressing provides a punch of flavour without being heavy, making it a perfect dish for warmer weather or as a starter for a larger meal.

Ingredients
  • 100 g raw jumbo king prawns
  • 100 g lettuce salad (torn into bite-sized pieces)
  • 1/2 red onion (thinly sliced)
  • 1/2 red bell pepper (thinly sliced)
  • 20 g pine nuts
  • 20 g capers
  • 1 tbsp olive oil
  • For dressing:
  • 1 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp wholegrain mustard
  • salt and pepper (to taste)
Instructions
  1. In a small jar add all the ingredients for the dressing close with a lid and shake until well combined.

  2. Cook the prawns on a pan with oil on a medium heat for 2 minutes per side.

  3. And finally assemble the salad by placing the lettuce on the bottom of the bowl, then onion, peppers, prawns, capers and pine nuts. Top the salad with a dressing, mix and enjoy!
