Quick Spicy Pickled Cucumber Salad

Description

This is a perfect quick salad to serve with seafood mains. I like it with salmon the most. All the ingredients combine very well, so just mix them and let infuse for 10-15 minutes, while you cook fish. For this salad, it is important to slice the cucumber very thinly. To make it nearly paper-thin I use a 3-in-1 multifunction peeler. And it helps to trim the veg very easy and fast. 

Ingredients
  • 200 g cucumber (hinly trimmed)
  • 2 tbsp lemon juice
  • 1 tsp honey
  • 1 tsp chilli pepper (minced)
  • 1 tbsp mint (finely chopped)
  • pinch of sea salt
Instructions
  1. Trim the cucumber thinly with a vegetable peeler.

  2. Season with salt and set aside for 10 minutes.

  3. Mix all the remaining ingredients for the dressing.

  4. Rinse and drain the cucumber thoroughly using a sieve.

  5. Pour dressing into the bowl with cucumber and mix gently.

  6. Let the flavours infuse for 10 minutes and enjoy with baked or pan-fried fish.
