Seasoned with a pinch of sea salt, freshly ground black pepper, and olive oil, rich and slightly fruity, this oil adds a smooth texture and a mild flavour that coats all the ingredients beautifully. Add freshly squeezed lemon juice, as it provides a tangy brightness that enhances the taste of each ingredient without overpowering them.
Cook the quinoa in salted water for 15 minutes, then let cool down for 5 minutes. The ratio is 1:2 for quinoa and water.
Then, add the quinoa to the bowl with the rest of the ingredients. Season it with salt, and pepper, and add olive oil and lemon juice. Gently mix, serve and enjoy!
