Roasted Whole Lamb Leg with Veggies

Super easy recipe with few ingredients is a great option when you have the time to cook a delicious dinner. It takes a few hours to bake the leg to perfection, but sure it's worth it.

Description

Lamb meat loves garlic and herbs. Rosemary is a great option here. It is best to marinate the leg for 24 hours or overnight, but if you have no time - bake it straight away. A combination of lamb leg with roasted vegetables is perfect. And you get fewer calories eventually.

Ingredients
  • 1300 g lamb leg
  • 5 garlic cloves (minced)
  • 5 rosemary (springs)
  • 1 small courgette
  • 1 aubergine
  • 10 cherry tomatoes
  • 4 tbsp olive oil
  • salt and pepper to taste
Instructions
  1. Mix garlic, olive oil, salt and pepper in a small bowl.

  2. Spread garlic mixture over lamb leg evenly.

  3. Marinate lamb leg for 24 hours or overnight (optional).

  4. Bake lamb leg for 3 hours at 160 C.

  5. 50 minutes before the end of baking time mix the veggies, and olive oil and season with salt and pepper.

  6. Bake for 50 minutes at 160 C.
