Description

As we have pears available all year and for this recipe, I use frozen blackberries, so I like to bake this pie throughout the year. All the ingredients make a delicious combination of flavours. As I use a bit of sugar in the dough so it is not too sweet. But topping the folded edges with some brown sugar makes perfect crunchy bite.

Ingredients
  • 150 g flour (plus for dusting)
  • 100 g butter (cold)
  • 1 egg (beaten)
  • 5 tbsp brown sugar
  • 200 g pears (pealed, corred, sliced)
  • 150 g blackberries (frozen or fresh)
  • 2 tbsp lemon juice
  • pinch salt
Instructions
  1. Preheat the oven to 180 C.

  2. In a food processor or by hand mix flour and butter for 30 seconds.

  3. Then add 1/2 of the beaten egg, 2 tbsp of sugar and a pinch of salt and mix for 30 seconds.

  4. Then cover the dough in cling film and leave in the fridge for 20 minutes.

  5. Meanwhile mix pears, berries, 2 tbsp of sugar and lemon juice and set aside.

  6. After 20 minutes take out the dough from the fridge and roll out into a 36 cm diameter circle using parchment and dust with flour if needed.

  7. Then transfer the dough onto the buttered and dusted with flour baking dish using parchment.

  8. Put the fruit mixture in the centre and even with a spoon.

  9. Fold the edges and brush them with a beaten egg. Then sprinkle with 1 tbsp of sugar.

  10. Bake for 40 minutes at 180 C.
