Description

I love salmon as it is a healthy source of protein, omega-3 fats and other nutrients, and it cooks in minutes.

Ingredients
  • 250 g salmon (skinless, boneless)
  • 200 g rice (cooked)
  • 4 eggs (beaten)
  • 1 tbsp olive oil
  • 2 spring onions (copped)
  • 1 chilli pepper (minced)
  • 4 garlic cloves (minced)
  • 1 tbsp fresh ginger (minced)
  • 4-5 tbsp soy sauce
  • salt (to taste)
Instructions
  1. Preheat the pan with oil to medium heat.

  2. Add green onion and chilli pepper, and cook for 1-2 minutes.

  3. Next, add garlic and ginger, and cook for another 1-2 minutes.

  4. Then add salmon, cook for 2-3 minutes, and cook them for 1-2 minutes stirring occasionally.

  5. Next, add eggs, and season with salt to taste, cook them for 1-2 minutes, stirring constantly.

  6. Then add rice, and soy sauce and cook for another 1-2 minutes, to let all the flavours combine.

  7. Serve warm with some seaweed and soy sauce.
