Description

Salmon patties are delicious and succulent, high in protein and omega acid fats, but low on carbs. Loaded with veggies they are perfect as a healthy dish for the whole family.
Serve it with salad or baked potato wedges or your favourite sides.
A super easy and quick option for any occasion, lunch, dinner, picnic etc.

Ingredients
  • 300 g salmon fillet (skinless, boneless)
  • 1 egg
  • 1/2 white onion (chopped)
  • 1/2 bell pepper (chopped)
  • 2 tbsp parsley (chopped)
  • 1 tsp dijon mustard
  • salt and pepper (to taste)
  • 2 tbsp olive oil
Instructions
  1. Tip all ingredients into a blender and pulse for a few minutes.

  2. Divide mixture into 4 and form patties.

  3. Fry patties on a pan with 2 tbsp olive oil for 2-3 minutes per side.

  4. Serve it with salad.

Note

For this recipe use skinless and boneless salmon fillet. Substitute parsley with dill if you like.
