This is an amazing vegetarian meatless version of filling lunch in a bowl.
In this soup, we have healthy protein and fibre, so it will be great as a complete lunch or dinner. Add a spoon of red pesto to the pot with soup at the end and it brightens up the dish. Serve with fresh crusty bread and it is the best combination.
Into a pot with chicken stock add all the vegetables except the beans and pasta and cook for 15 minutes.
Then add the beans and pasta, and cook for another 5 minutes.
Add oregano, salt and pepper and let it simmer for the last 3-4 minutes.
Serve and enjoy!
