Description

In this soup, we have healthy protein and fibre, so it will be great as a complete lunch or dinner. Add a spoon of red pesto to the pot with soup at the end and it brightens up the dish. Serve with fresh crusty bread and it is the best combination.

Ingredients
  • 1 white onion (peeled, cubed)
  • 1 small courgette (chopped)
  • 1 carrot (peeled, chopped)
  • 1 large white potato (pelled cubed)
  • 1 celery stalk (sliced)
  • 1 tomato (chopped)
  • 100 g green beans (cutted into 32 cm pieces)
  • 400 g cannellini beans (drained and rinsed)
  • 50 g smal shape pasta
  • 500 tbsp chicken stock
  • 1 tbsp red pesto
  • 1 tsp dry oregano
  • salt and pepper (to taste)
Instructions
  1. Into a pot with chicken stock add all the vegetables except the beans and pasta and cook for 15 minutes.

  2. Then add the beans and pasta, and cook for another 5 minutes.

  3. Add oregano, salt and pepper and let it simmer for the last 3-4 minutes.

  4. Serve and enjoy!
