Ingredients
  • 1 small aubergine (diced)
  • 1 tbsp olive oil
  • 2 tbsp soured cream
  • 1 garlic clove (minced)
  • 2 eggs (whisked)
  • 1/2 tsp chilli flakes
  • 1 handful cherry tomatoes (halved)
  • salt and pepper (to taste)
  • 1 slice sourdough rye bread (toasted)
Instructions
  1. On the preheated to medium heat pan with olive oil fry aubergine until tender, about 4-5 minutes, stirring frequently. Then season with chilli flakes, salt and pepper and cook for 1-2 minutes.

  2. Next set aside aubergine and toast the bread. And mix soured cream and garlic with salt to taste in a small bowl.

  3. Then make scrambled eggs, by cooking them on low heat for 2-3 minutes, stirring frequently.

  4. Then, place toast on the plate, spread soured cream with garlic, and add aubergine on top. Next add scrambled eggs, tomatoes and enjoy!
