Description

This is such a tasty salmon. Baked with ginger, honey, lemon, soy sauce and chilli pepper it goes perfectly with quinoa and some steamed broccoli.

Ingredients
  • 250 g salmon fillet (boneless)
  • 100 g quinoa (rinsed and drained)
  • 100 g broccoli
  • salt and pepper (to taste)
  • Mix for the salmon:
  • 1 tbsp sesame seed oil
  • 2 tbsp soy sauce
  • 1 tbsp lemon juice
  • 2 tsp sesame seeds
  • 1 tsp honey
  • 1 tbsp ginger (grated)
  • 1 tsp garlic (minced)
  • 1 small chilli pepper (deseeded, finely chopped)
Instructions
  1. Boil water for quinoa with salt to taste in a ratio of 3:1. Add quinoa and simmer on low heat for 20 minutes. After that turn off the heat and leave for 10 minutes.

  2. Preheat the oven to 180 C.

  3. Mix all the ingredients for the salmon mix.

  4. Place salmon fillets on the baking tray with parchment paper. Top with the mixture and bake for 17-19 minutes.

  5. Meanwhile, steam the broccoli florets in the steamer for about 5 minutes.

  6. When all ready, serve and enjoy!
