Description

This is a nutritious and warming soup for colder days. Few simple ingredients and steps and in 30 minutes lunch or dinner is ready. 

Ingredients
  • 500 g chicken thigh fillet (sliced into bite sized pieces)
  • 400 g cannelini beans (cooked)
  • 1 large white onion (finely diced)
  • 1 large carrot (sliced thinly)
  • 3 celery sticks (finely diced)
  • 3 garlic cloves (minced)
  • 2 tbsp olive oil
  • 1 tsp sweet paprika
  • 1 tsp chilli flakes
  • 1 tbsp tomato puree
  • salt and pepper (to taste)
  • 400-500 ml water
Instructions
  1. Preheat a pan with olive oil to medium heat and add onion, carrot and celery, cook for about 2-3 minutes, stirring occasionally.

  2. Next, add chicken fillet and cook for 2-3 minutes, stirring occasionally.

  3. Then add spices, tomato puree, salt and water and cook for 20 minutes on medium heat with lid on.

  4. Next, add beans and cook for another 4-5 minutes.

  5. When ready serve with fresh herbs and bread of your choice.
