Description
  • These peppers are stuffed with tender and seasoned chicken, which serves as the primary protein component in the filling. It provides a hearty and flavorful base for the stuffing. A colourful array of vegetables such as chilli, onions, corn, and garlic is incorporated into the filling. This not only adds texture and flavour but also contributes to the nutritional profile of the dish. For this meal large, vibrant bell peppers are chosen for stuffing. The peppers are hollowed out to create a cavity for the filling. Red bell peppers add visual appeal to the dish. It is so good and healthy served with some salad on a side.
Ingredients
  • 4 large bell peppers, any colour (top cutted, hollowed out)
  • 250 g chicken thigh fillet (cubbed)
  • 1 white onion (finelly chopped)
  • 4 garlic cloves (minced)
  • 1 chilli pepper (seeded, finelly chopped)
  • 150 g corn
  • 100 g Cheddar cheese (grated)
  • 2 tbsp olive oil
  • salt and pepper (to taste)
Instructions
  1. Preheat the oven to 180 C.

  2. Cook bell peppers in boiled water for about 5 minutes. Then take it out and let it cool down a bit.

  3. On a pan with olive oil on medium heat cook the chicken for 5-7 minutes, until pale pink.

  4. Remove chicken from the pan on a plate and set aside.

  5. Then on a pan saute onion for 3-4 minutes, then add garlic and chilli pepper, and cook for 1-2 minutes. 

  6. Next, add cor, return to the pan chicken and season with salt and pepper. Cook for another 1-2 minutes, turn off the heat and add half of the cheese.

  7. Next, stuff the peppers with the filling, place them on the baking dish and top each with the remaining cheese.

  8. Bake for 20 minutes, until cheese is golden brown.

  9. When ready, serve with a salad on the side and enjoy.
