Amazing healthy and flavourful meal for busy weekdays.
These peppers are so tasty and easy to make. They are ready in about 30 minutes. Filled with loads of vegetables and lean turkey mince with added chilli peppers they will be perfect for a low-carb or weight-loss diet.
Pregheat the oven to 180 C.
Transfer all the vegetables, except the peppers, to the food processor and process until finely chopped.
Add turkey mince to the pan with oil on medium heat and cook for 5 minutes, stirring occasionally.
Add all the minced vegetables to the pan with mince along with Italian herbs, salt and pepper, cook for 10 minutes, stirring occasionally.
Meanwhile, add peppers halves to the pan with salted boiling water and cook them for about 10 minutes on medium heat, until slightly soft but keep the shape.
Drain the pepper halves and transfer them into a baking dish. Stuff the peppers with stuffing and top with grated cheese.
Bake for 15-17 minutes.
Serve with a salad on the side and enjoy!
